Mostly just dirt, there are some sections with gravel or mixed with small stones.
Those stones look like "Nepean River Gravel". It's common around that part of the Sydney basin:

Over millions of years it washed down the river, rounded and came to rest there. A great deal of it has been mined for concrete. Sand too.
