I recently decided to spoil myself for Christmas and have an Edge 800 on the way. I obviously haven't used it as yet but spent a fair bit of time reading about what others do and do not like about other Garmin units and this seems like a great, but expensive, unit. If it were not for this then I am sure that I would be happy with the 705 (as it has maps) but even the 500 or the 305 as I have played with both of them. If you can, go for the 800 though.
I have a 705. The navigation has gotten me out of getting lost on the trail on two occasions, but the mount is not particularly confidence-inspiring. The 500 has a much more bullet-proof mount, and has temperature monitoring. As a consequence, its altitude measurement is also more accurate.
