The removal part isn't that bad for a DIY (just Google it and follow the instructions) but most bike shops should be able to do it for you. CBD in Kent street are also C'Dale dealers. You could try some of the bike stores that used to be C'Dale dealers i.e. BA, Belrose etc. as I'm sure they would still have 1 or 2 mechanics who have had experience in removing Leftys.
Lefty service - I have recently used RLC Sports and the entire experience was brilliant. After a few email exchanges (and he does reply, even when at the Aus MTB champs) I removed the Lefty myself and took the Lefty to Aiden (as I live 25 mins away) and he did it in 2 days... that's with a backlog of work after being away. His communication was great, it was refreshing to deal with someone who actually delivers.
The only downside is that you would need to ship it to QLD, although I'm sure it wouldn't be the first time Aus Post has had a Lefty in transit.

I know at least one of the mechanics there is certified for Lefties, apparently it wasn't easy to get as they're tricky buggers inside
