Have been given the timex cycle trainer 2.0 , was wondering if you can put it on a mountain bike or just a road bike . Before I get any smart arse replies , yes I am technologically challenged and never seen one before .
And how do you install ? Any help appreciated , manual does not help much .

The reason the manual doesn't seem to help much is that there really isn't that much to installing these things. You're overthinking it.

Apart from the cadence sensor, it's just a matter of fitting it to your handlebars or (better) your stem, turning it on, and pressing Start when you start your ride, and then again when you stop. The GPS works out the rest by itself, including the time. The heart rate strap just goes around your chest just below your pectoral muscles.

Does it have a cadence sensor? If so, you may have some challenges fitting the sensor to the right spot on your non-drive side chainstay if your brake hose is in the way. I'm still to fit a cadence sensor to my dually for this reason, but will get it done this weekend.

Downloading your ride data is a matter of opening an account with strava.com, or downloading a free copy of trainingpeaks software.
