they are able to build trails like that in the middle of forest areas and yet we are having "legitimate" trails closed that in comparison, resemble highways?

Those trails are not America. It's Canada. I'm led to believe that since where the trails are is buried in a lot of snow for a lot of the year and when there is no snow the authorities have more pressing engagements than searching for and removing ramps,ladders,bridges and jumps. And there's a lot of bushland to search and the riders that build them keep them hidden.
Don't think it's all happy summertime trails. I've spoken with plenty of Canadians about this and they tell me that they can build something which takes an age to reach and the next occasion they return it has been completely destroyed.
The trail closures we suffer seem to be almost exclusive to NSW. I blame the relevant NSW authorities. Other states here in Australia don't seem to be suffering as we are.
In the Kosciusko National Park one cannot simply ride where one wishes. A lot of trails are marked as walkers only even though the amount of traffic they experience is very low due to the nature of the environment. When the park bumps up against the border with Victoria the name changes the Alpine National Park and magically no such restrictions exist. Many trails are even open to motorcycles and 4WD.
Americans I've known and discussed things with tell me that it's rare to find good trails close to any metro area and one must drive a long way to get their fix. In turn, once they are in a remote place they can generally get away with building all sorts of exciting things to leap off and over and it stands a pretty good chance of remaining intact upon returning.
The point of all this is that I understand that all the constuctions that we are all awed by in videos is probably built in a remote place away from prying eyes and the people riding them are dedicated to their cause yet can't really ride them after work or go for a quick spin.
If anyone really wants to create similiar things then perhaps you'll need to drive out to the middle of nowhere(up the Putty Road springs to mind)build a fun park and enjoy. It'll survive because no on will be around to see you...the trails will be always open because no one will be there to put a closed sign across it. Just take a packed lunch.
